Day 3 - Babies, beans and a bad leg!

Hello!

Thursday was a fun one.

Had a lie in…again. Thanks! (twinge of guilt as the fella is waking up at the crack of dawn).

Babies = My friend had a baby!!! A beautiful baby girl and I just know that she’s going to be a special little being.

Beans = I made some bean burgers. It’s been a while and the other day, on a food run, Sandy and I could only find dried Black Turtle Beans so we picked up a pack and after 12 hours of soaking, 3 hours of boiling and a fun sticky session of making the patties, 10 little burgers were born!

Found a carrot, an onion, half a lemon, two garlic cloves, some butter beans in the cupboard and mulled Chia seeds to combine with the beans. Mashed it all up and added the inners of two turmeric and black pepper capsules. Popped them in the freezer to set and waiting eagerly for the demolition of said patties. WE picked up some guac today and will devour them on Saturday night. YUM!


Bad leg switch = Went for a lunchtime run and failed. Strava didn’t help to motivate me and nor did my high sugar levels. I was 20.1mmol (EEEEK) which basically means I was too flipping high to hope for a good sash. Sugar level range should be between 4-8mmol so 20.1mmol was a bit of a bummer. A good 8 years ago I tore my ACL on a skiing trip in Norway with the famalam and the run yesterday triggered a twinge. In all fairness, I was running along racecourse and to avoid other people talking their daily stroll, I kept heading onto the uneven grassy banks alongside the pathways. Turns out that too many bumps on those grassy stretches were proved a little too detrimental resulting in a little set back for my knee.

A dear friend of mine who lives in Catalonia also had a dress delivered to Dotty’s house to save on postage fees to Spain! So, of course, I put it on and felt super lovely and feminine for the afternoon wearing a pretty dress to make bean burgers! It wasn’t long lasting as Sandy and I headed out for an evening stroll among the stars so had to wrap up in my new daily attire consisting of new baggy sweat pants (thanks Sweaty Betty), wooden thermal top, woolly jumper, hat and all the layers.

Hey Ho! On the whole it was a wonderful day filled with all the B’s and more B’s - had a lovely little video call with a close girl friend and her babies - my goddaughter being one of the gems. My goodness, how fortunate we are to be living in 2020 with all the technological luxuries enabling us to connect with loved ones.
